Giannola and Benito Nonino are regarded as revolutionaries in the world of grappa. The New York Times agreed, writing: “They have transformed grappa from a Cinderella into a queen”. In the 1970s, the pair revolutionised not only the production but also the marketing of grappa. This was accompanied by further innovations such as grape brandy and honey distillates. The Nonino family is known for its strong ties to its homeland, and so it uses exclusively pomace from local grape varieties for its grappa production – some of which were on the verge of extinction. Only Chardonnay grapes are used for the “Lo Chardonnay Barriques” grappa. After distillation, the grappa is aged briefly in small oak barrels.
