Xiaman Mezcal is produced strictly ‘artesanal’, i.e. in accordance with tradition and strict rules. With an alcohol content of 44%, this ‘ensamble’ – a roasted blend of the highest-quality Tepextate and Espadín agave varieties – meets all the requirements of the Mezcal Regulatory Council, the relevant regulatory body.

The process

Xiaman is a blend of two agaves: 50% Tepextate agave and 50% Espadín agave. This blend achieves a perfect balance between the complex flavours of Tepextate and the rich flavours of mature Espadín. Tepextate is a wild agave that takes 25 to 30 years to mature properly, whilst the Espadín agave is ready for harvest in 3 to 8 years.
