DESCRIPTION
In 1947, William Delmé-Evans converted a centuries-old brewery on the southern edge of the Scottish Highlands into a whisky distillery, which would henceforth be known as Tullibardine. Whisky and beer have more in common than one might think; after all, the very first stages of the production process are very similar. However, unlike beer, whisky undergoes double or triple distillation and is then matured for at least three years – though often ten years or more – in selected casks. The Tullibardine logo features the year 1488 beneath a crown. Why? The brewery from which the distillery emerged was already in existence in the 15th century, when none other than James IV of Scotland dropped by to enjoy a drink shortly before his coronation. The Tullibardine 500 Sherry Finish owes its nutty-brown colour to the 500-litre sherry butts. The aromas are mainly derived from first-fill bourbon casks. These were carefully selected by Tullibardine’s whisky experts and shipped across the Atlantic for ‘recycling’. It’s hard to believe that the nuances of candied apple, porridge, spices and sweet dates that unfold on the palate actually come from the old wood.
