DESCRIPTION

In 1947, William Delmé-Evans converted a centuries-old brewery on the southern edge of the Scottish Highlands into a whisky distillery, which would henceforth be known as Tullibardine. Whisky and beer have more in common than one might think; after all, the very first stages of the production process are very similar. However, unlike beer, whisky undergoes double or triple distillation and is then matured for at least three years – though often ten years or more – in selected casks. The Tullibardine logo features the year 1488 beneath a crown. Why is that? The brewery from which the distillery emerged was already in existence in the 15th century, when none other than James IV of Scotland dropped by to enjoy a drink shortly before his coronation. The Tullibardine Sovereign owes its colour, aroma and flavour largely to the first-fill bourbon casks, which were shipped across the Atlantic Ocean to be ‘recycled’. It’s hard to believe that the nuances of flowers, barley and vanilla that unfold on the palate actually come from that old wood.
