DESCRIPTION
The grapes for the 10 Year Old Tawny are harvested by hand, destemmed for the most part and crushed in shallow steel tanks. Unfortunately, even in Portugal it has become increasingly difficult in recent years to find harvest workers to crush the grapes, forcing the port wine houses to develop other technologies. Using the latest equipment, the pomace is regularly crushed to extract the maximum amount of colour, aroma and flavour. This smooth processing has enabled Taylor's to maintain and even improve its quality standards. After half of the sugar has been fermented into alcohol, the free juice is drained off and wine distillate is added. This stops the fermentation process by increasing the alcohol content and preserving a natural residual sweetness. over the winter, the wines mature in large barrels in the upper Douro Valley and are then taken to the port town of Vila Nova de Gaia, where they mature in very old wooden barrels with a capacity of 630 litres for an average of 10 years.
TastingNotes
Colour: Tan, dark amber.
Nose: Sweet and aromatic, honey and lots of herbs, reminiscent of herbal liqueur, vanilla, Christmas spices and pickled plums.
Palate: The flavour is easy to follow, aromatic and dense, wonderfully balanced, infused with fruity acidity, nutty and very long on the finish.
