DESCRIPTION
The grapes for the 10 Year Old Tawny are harvested by hand, mostly destemmed, and crushed in shallow steel vats. Unfortunately, in recent years it has become increasingly difficult in Portugal to find harvest workers to tread the grapes, forcing the port houses to develop alternative technologies. Using gentle methods and state-of-the-art equipment, the cap of pomace is regularly worked through to extract the maximum colour, aroma and flavour. Thanks to this seamless processing, Taylor’s has been able to maintain and even raise its quality standards. Once half of the sugar has fermented into alcohol, the free run juice is drained off and wine distillate is added. This stops the fermentation process as the alcohol content rises, whilst retaining a natural residual sweetness. The wines mature over the winter in large casks in the upper Douro Valley, before being transported to the port city of Vila Nova de Gaia, where they age for an average of 10 years in very old wooden casks with a capacity of 630 litres.
Tasting Notes
Colour: Tawny, dark amber.
Nose: Sweetish and aromatic, with honey and plenty of herbs, reminiscent of herbal liqueur, vanilla, Christmas spices and preserved plums.
Palate: The nose is clearly reflected on the palate; aromatic and dense, wonderfully balanced, with a hint of fruity acidity, nutty notes and a very long finish.
